I am a professor of English at USF and a wiki advocate...
I've tried a variety of wikis (e.g., writingwiki and grammarwiki...but they haven't really taken off. MY efforts to get blogging communities going have been amazingly successful (see http://writingblogs.org) but people tend to shy away from wikis. Still, I"m working w/ the NDLTD now on this new wiki and remain hopeful: http://www.flexwiki.etdguide.org
